As an aside, bottom round is my preferred cut for making deli-style roast beef. Sous-vide for ~12hrs or so and it's perfect. Eye Round famously isn't a great cut (certainly not as good as bottom round), but that's just one store and one week's sale, and it can be a perfectly serviceable braise or roast.
